Easy Chicken Enchiladas

Easy Chicken Enchiladas

We like to eat a variety of foods, but we also like quick, simple, and nutritious.  This recipe was originally from Kraft Foods, but we have tweaked it a little and are NOT brand specific. Most of our ingredients come from Aldi, but use what products and brands your family likes:) You can substitute whole grain tortilla’s or brown rice, etc.

This is a great meal for a crowd like 8-12 people. If you serve this with rice, refried beans, and offer other sides like avocado, guacamole, and salsa with chips then you can easily stretch it to 12 people. Have a smaller family? No problem. This makes for a great freezer meal. It can be placed in an 9×9 pan and you could get 3-4 meals from it or just two meals from 9×13 sized pan. This is a great recipe to take to a new mom, someone who had surgery, or to stock up for your own postpartum!

Make sure to let your little kitchen helpers sprinkle on the cheese or roll up the enchiladas! Your children can become great helpers if you allow them:)

Now on to this great recipe:

1/2 cup Mayo or Miracle Whip

1/2 cup flour

3 cups milk

1 pkg. (8 oz.) shredded cheddar cheese

1 1/2 lb. boneless skinless chicken breasts, COOKED, bite size pieces or shredded

1/2 cup salsa (your choice of heat)

16-  6″ to 8″ tortillas (flour, whole wheat, whole grain your choice!)

Heat oven 375 degrees. Whisk mayo and flour in saucepan until well blended. Gradually stir in milk and bring to boil on medium heat. Stir CONSTANTLY, cook until thickened (usually a couple of minutes). Add 1 cup of cheese; stir until melted. Remove from heat.

Reserve 1 cup of sauce for topping.

Stir chicken, salsa, into remaining sauce. Spoon 1/3 cup of filling down the center of tortilla. Roll up and place seam side down in greased pan. Top with remaining sauce and cheese.

(use two 13×9 inch pans or three 9×9 pans. You can cook one and freeze the other.)

Bake for 25 minutes or until heated through when baked fresh.

Bake for 40 minutes or until heated through when refrigerated.

Thaw overnight in fridge if frozen.
